Cooking time with Luigi del Ponte

Alan,

It’s probably too late for your tomatoes since you left your message several days ago, but here’s a sauce recipe that is easy, delicious and will help you and Marci grow closer together. I don’t really follow an exact recipe for this so the amounts are intended to be estimates – play around with it as you see fit.

2 tomatoes
2 glugs of olive oil
1 clove of garlic
basil
salt
sugar

Sautee the garlic in olive oil on medium heat until the garlic starts to get golden. Add the tomatoes (chopped into large chunks – I usually cut them into quarters). After 5 minutes or so, you can turn the heat down to medium-low and just let things cook for as long as you want (I usually wait at least an hour), stirring occasionally. When you’re done, mash what’s left of the tomatoes into more of a sauce type consistency (I use a potato masher but you could just use spoon or something). Add a pinch of sugar. Add basil and salt to taste. Eat with plenty of breadsticks.

FYI: We usually make this up in larger batches (6 or 7 tomatoes) and then keep it in the fridge to use throughout the week. It works well for us and keeps for at least a week or so.
